This Week's Recipe
Down home cookin'. I told ya'll.
This is my mother's recipe for pea salad. It is wonderful. It also makes it easy for her, since it's what everyone always wants her to make. Just remember you really need to make it a day ahead of time, for the flavor to be at it's peak.
Mama Vi's Pea Salad
Combine:
1 can white corn
1 can Early Peas
1 can small lima beans
6 green onions (cut fine)
(options)
some finely chopped celery
1 can small button mushrooms (I always add these!)
MIX separately:
1/3 cup vegetable oil
2/3 cup sugar
3/4 cup white vinegar
Stir until sugar dissolves
Pour over vegetables, add salt and pepper to taste.
Refrigerate NO LESS THAN 6 hours (better if over night)
